For folks with one foot decidedly in the past, you might not think our other foot is way out there in sustainable food sourcing and preparation—but it is. We don’t like to brag, but we’re up to some pretty cool things here. For starters, we work with local and regional farmers and partners for our produce and meats whenever we can. And we recycle our cooking oil so it eventually gets converted into biodiesel. We’ve eliminated all plastic use, like straws, cutlery, cups, etc. and have replaced them with earth-friendly alternatives. It’s part of our Green Travel Certification, and we’re happy to do it. To do it any other way in such a beautiful place would just not be right.
